The zivieri butcher shop is part of the La
Granda Consotium (Slow Food for the piemontese cattle breed);
therefore it can satisfy the finset tastes of connoisseurs
of these products. Massimo will be at your disposal to advise
and to satisfy your requests on all beef or veal cuts: braised,
boiled, roasts, and other specialities.
The meat come from pig: bred wildly,
that graze freely in the woods and feed on what nature has
to offer, suchs as chestnuts, tuber and above all acorns.
The main skilfully produced hams are:
1 - Mountain salami: minimum ageing 60-70 days
2 - Cured bacon 150-180 days
3 - Salsiccia passita: aged and fine or medium grain
